{GO BANANAS!}
In spite of the fact I eat a breakfast of oatmeal (or a variation thereof) most every day, there are some days I just need a pancake.
Those days I make these.
Banana pancakes.
Made of one banana, one egg and one tablespoon whole wheat flour.
That's it.
If anyones tells you that you can't taste the banana that's a big fat lie.
I don't mind, I like banana.
I am bananas. That's a different post.
Mash up one banana in a bowl.
Mix in one egg.
(optional step)
Mix in one tablespoon whole wheat flour.
Pour into hot pan, use coconut oil to keep it from sticking.
I drizzle on some honey.
And I eat every. single. bite.
Make some and tell me what you think!

Janine, these are by no means normal pancakes! They really do taste like banana... but feel like a total splurge! Does that make sense?
